Sweet Onion Dressing.

Sweet onion dressing has a mild, sweet onion flavor that goes perfectly with a fresh salad!

Salad is not exactly my love language, so you know when I say love a salad with this beautiful sweet onion dressing, it’s something to get excited about! Sweet with a little vinegary kick and a mellow onion taste, it’s perfect for drizzling on tender greens or crisp lettuce. It adds a ton of flavor without being heavy, and is a fresh, fun change of pace if you’re in a salad rut. I especially love it paired with savory toppings, like grilled chicken, toasted nuts, cheese, bacon (duh), or crispy fried onion strings (or…all of the above?)! French Toast.

A french toast recipe that takes really simple ingredients and makes them all shine for a perfect breakfast treat.

As much as I love pancakes…and was just this month yammering on about waffles…French toast is my favorite. The inside turns soft and almost custardy, while the crust of the bread gives each bite some structure and chew. But the best part is that golden, buttery-caramelized surface with hints of cinnamon, nutmeg, and vanilla! Continue reading “French Toast.”

Nutty Coconut Granola (and a Granola Master Plan).

Snackable, giftable, and of course, breakfastable…I love opening my pantry and seeing a container of homemade granola inside! I’ve been using this granola recipe since my friend Rach first made it when we were roommates. It’s super easy to make, and you can use whatever add-ins you like. This version has a couple different kinds of nuts, and shredded coconut, since I almost always have those around! Continue reading “Nutty Coconut Granola (and a Granola Master Plan).”

Two-Ingredient Chocolate Mousse Truffle Cups.

Two-ingredient chocolate mousse truffle cups are a rich, intensely dark chocolate experience!

For a dessert that’s only two ingredients, I sure had a hard time naming this one. An intensely chocolatey concoction of coconut milk + deep dark chocolate, chocolate mousse truffle cups are mousse-ish, but not fluffy, and truffle-like, but you can eat it with a spoon. I don’t really care what you call it, but if you need a quick, easy, make-ahead dessert for Valentine’s Day (or any day) – this is it! 21 Day Fix Meal Plan & Shopping Lists

21 day fix meal plan cover

Happy New Year, friends! I’ve been working on this project and I’m so excited to be able to share it with you. I’ll post a recipe soon, but today I have a meal plan for ya…a 21 Day Fix Meal Plan!

When you’re making changes to your eating habits and adopting a healthy lifestyle, planning is such a huge (and time consuming) component. There have been many (many, many) times where I inwardly resolve to “eat better tomorrow” without actually making a plan…and then “tomorrow” offers pitfalls like, for example, being starving after church in the presence of the little donut holes for the kids (they’re for the kids! I know they’re for the kids! gosh!), or arriving home from the grocery store with healthy foods but no specific plan on what to actually eat for dinner. Same goes for working out – I’m much more likely to squeeze in a workout if I have it on my calendar and I know exactly what I’m going to do. (In my pre-kid life I used to wonder why people didn’t work out regularly. Uh, the joke’s on me these days! Did I mention I worked at a gym? Hahaha..ha.) Food for Thought #12: November.

1.// I hope you had a lovely Thanksgiving and you got to eat all your favorite Thanksgiving foods with your favorite people! I personally like to have turkey, stuffing, mashed potatoes, and gravy all in one bite. A lot of times. :o)

2.// I accidentally missed my own anniversary – the blog turned 2 in October! Today’s post is my 145th since it all started in 2014. Thanks for coming along for another year of good food and welcoming family and friends to the table with it! Continue reading “Food for Thought #12: November.”
