**This post is brought to you by my sister, Laurie…with occasional interjections by me, so I can brag about my Instant Pot.**
Laurie: I’ve made this balsamic chicken several times now and it’s not a fluke. We really like it! That’s basically all the reason I need to add it to our regular rotation. But there are so many other good reasons! Continue reading “Balsamic Chicken in the Crockpot (or Instant Pot).”

This is a super-easy recipe, made with pantry staples. It comes together quickly and can easily be doubled for a crowd. (And I think it even fits Bet’s Faster-than-Fast-Food rules.)

A few years ago we had this great idea. We wanted to be able to make salsa with ingredients grown in our garden. So we planted tomatoes, onions, jalapeño peppers, and cilantro. Continue reading “JP’s 6 Ingredient Salsa in the Blender”

When I was in college, one of my favorite meals from our little food court (affectionately knows as the Furman P-Den) was chicken caesar wraps. I haven’t thought of them in years, but all of a sudden last night I was consumed with the need to eat one again. Continue reading “Chicken Caesar Wraps.”

I decided to call this chicken “Back Pocket Chicken,” because it’s the perfect recipe to keep in your back pocket for all sorts of occasions.
It’s delicious enough to serve when company comes over, but it’s totally kid-friendly. Coated in bread crumbs and parmesan cheese, it’s kind of like a glorified chicken nugget–but oh-so-much tastier. It also couldn’t be easier to throw together, which is just what you need after a long, busy day or when guests will be arriving shortly and you still need to clean the bathroom. And it’s my go-to recipe for giving at bridal showers. Continue reading “Back Pocket Chicken.”

Once upon a time, I was at a potluck supper and found myself walking past the dessert table on my way to the end of a long buffet line. I snagged a little round chocolate something and took a bite… and found myself with a little nugget of chocolate chip cookie dough dipped in chocolate! Part of me wanted to tell everyone in line about this amazing little treat, but the rest of me wanted there to still be some left when I went through the dessert line for real! I have been looking for an excuse to make these Cookie Dough Truffles ever since. Christmas Cookie Week seems like a good time. (Cookie dough qualifies it as an acceptable recipe, right?!) I’ll be packaging these up as gifts for my boys’ teachers–that is, if we don’t eat them all ourselves!
