Homemade Applesauce.

Homemade applesauce is thick, naturally sweet, and intensely apple-y in a way that grainy, watery, artificially sweetened store-bought sauce can't compete with!

Homemade applesauce has become a hobby an addiction a passion of mine. Every few weeks I buy a 15 lb box of “scratch and dent” apples, and it sits on the counter for 3 days while I squirm and wish it didn’t exist. Why did I saddle myself with all these apples aGAIN? But then…I finally tackle it, and as I wash the apples their gleaming, shiny skins start improving my mood.

Nutty Coconut Granola (and a Granola Master Plan).

Snackable, giftable, and of course, breakfastable…I love opening my pantry and seeing a container of homemade granola inside! I’ve been using this granola recipe since my friend Rach first made it when we were roommates. It’s super easy to make, and you can use whatever add-ins you like. This version has a couple different kinds of nuts, and shredded coconut, since I almost always have those around! Continue reading “Nutty Coconut Granola (and a Granola Master Plan).”

Chewy Chocolate Peanut Butter Flax Granola Bars.

Chewy chocolate peanut butter flax granola bars taste like a candy bar, but are full of healthy ingredients!

These chocolate peanut butter flax granola bars bring me great joy. They taste a lot like a candy bar, but they’re full of healthy stuff (oats! flax! nuts!) and aren’t nearly as indulgent as that blanket of chocolate makes them look. They’re chewy, peanut buttery, sweet and salty, and I keep running out of the ingredients because I can’t.stop.making.them. Continue reading “Chewy Chocolate Peanut Butter Flax Granola Bars.”

5 Awesome Real Food Snacks.

When I gave up my ice-cream-every-night habit, I had to replace it with something. We try to eat dinner as a family at 5:30, and I’m just not going to make it to bedtime without a snack most nights. And especially at first, it was hard not to cave and have the sweet treat I was craving. Enter: real food snacks. Continue reading “5 Awesome Real Food Snacks.”

Paleo Granola.

Our new neighborhood has a pool, and it’s really fun to be able to walk there with the girls! It only takes a few minutes, but somehow on the way home everyone suddenly realizes they’re comPLETELY starving and can’t possibly obey basic safety rules/sit in the stroller/survive. So pool snacks have become a must for us. (It also helps ease the pain of getting out of the pool if there’s an applesauce squeezy pack and a bag of paleo granola with your name on it!) Pita Pizzas (a Faster than Fast Food Meal).

pita pizza

We have officially completed Phase 1 of our move! Everything we own* is out of our house and in storage, and we’ve moved in with friends in Raleigh. Eventually we’ll be house/dog-sitting for them, but for now we’re just taking up a lot of their space. Phase 2 is a teeeeny rental place in Wilmington that I’m optimistically referring to as our “vacation house”, where we’ll be until we can move into our actual new house (c’mon, Phase 3!).

*except for the piles.upon.piles of things that 2 adults, 1 kid, 1 baby and 1 dog need for a couple of weeks of nomadic living

Even if your kitchen isn’t packed into boxes, there are days you need dinner to be extra easy. I’m compiling a few “faster than fast food” meal ideas for ya – it’s even a new category on the Recipes page! Continue reading “Pita Pizzas (a Faster than Fast Food Meal).”

Chocolate Chip Granola Bars.

chocolate chip granola bars

I love to bake, but lack the self-control to have homemade sweets around on a regular basis. (Oh, I’m in the kitchen, it must be time for a snack to hack off another piece of this cake/snitch another cookie/try not to let the kids see that I’m chewing something….)  That’s why I’m so into zucchini snack cake and breakfast cookies, since they’re healthier (lower in sugar and more filling, at least!) but still fun to bake. When I mentioned my granola-bar-making woes, one of my readers pointed me to these chocolate chip granola bars from Weelicious (thank you, Lindsay, from the bottom of my heart!), and I’ve been making them ever since! Flourless Chocolate Chip Zucchini Snack Cake.

flourless chocolate chip zucchini snack cake

A friend recently posted a picture of their kids eating something chocolate cake-y for breakfast. And said it contained vegetables. Obviously, I immediately wanted to have some in front of me. Now I’ve made it twice, and my three-year-old is in.love. It’s flourless, only a few ingredients, full of zucchini, and super tasty – definitely a winner!
