Homemade applesauce has become
a hobby an addiction a passion of mine. Every few weeks I buy a 15 lb box of “scratch and dent” apples, and it sits on the counter for 3 days while I squirm and wish it didn’t exist. Why did I saddle myself with all these apples aGAIN? But then…I finally tackle it, and as I wash the apples their gleaming, shiny skins start improving my mood.

I’ve been using this granola recipe since my friend Rach first made it when we were roommates. It’s super easy to make, and you can use whatever add-ins you like. These chocolate peanut butter flax granola bars bring me great joy. They taste a lot like a candy bar, but they’re full of healthy stuff (oats! flax! nuts!) and aren’t nearly as indulgent as that blanket of chocolate makes them look. Our new neighborhood has a pool, and it’s really fun to be able to walk there with the girls! It only takes a few minutes, but somehow on the way home everyone suddenly realizes they’re comPLETELY starving and can’t possibly obey basic safety rules/sit in the stroller/survive. So pool snacks have become a must for us. (It also helps ease the pain of getting out of the pool if there’s an applesauce squeezy pack and a bag of paleo granola with your name on it!) We have officially completed Phase 1 of our move! Everything we own* is out of our house and in storage, and we’ve moved in with friends in Raleigh. Eventually we’ll be house/dog-sitting for them, but for now we’re just taking up a lot of their space. Phase 2 is a teeeeny rental place in Wilmington that I’m optimistically referring to as our “vacation house”, where we’ll be until we can move into our actual new house (c’mon, Phase 3!).
*except for the piles.upon.piles of things that 2 adults, 1 kid, 1 baby and 1 dog need for a couple of weeks of nomadic living

I love to bake, but lack the self-control to have homemade sweets around on a regular basis. (Oh, I’m in the kitchen, it must be time
for a snack to hack off another piece of this cake/snitch another cookie/try not to let the kids see that I’m chewing something….)
