Summer Sides.

Tonight we had some grilled fish and two of my go-to side dishes – and I realized they were both posted in my first month of blogging!

These crispy parmesan potatoes go with anything. They’re fluffy on the inside and salty and toasty on the outside. We had them last week, too, with a Costco rotisserie chicken.

sauteed squash and zucchini

My mother-in-law makes the most amazing yellow squash (mine is never quite as good as hers) and I always think of her when I cook it! I love, love, love this cheesy squash casserole – my first post, awww! – and this is just the first part of that recipe. One onion, two tablespoons of butter, 4 medium zucchini and/or yellow squash, and salt and pepper. You need at least 30 minutes and a low-ish temperature, and it all turns so sweet and tender. Some meals call for casserole and some for this simpler version, yes?

The fish was wahoo, and Jay grilled it with avocado oil, salt and pepper, lime juice, and paprika, then finished it with a little butter and lime zest. Yum.
