Balsamic Chicken in the Crockpot (or Instant Pot).

Balsamic chicken is an easy crockpot meal in a tangy tomato sauce!

**This post is brought to you by my sister, Laurie…with occasional interjections by me, so I can brag about my Instant Pot.**

Laurie: I’ve made this balsamic chicken several times now and it’s not a fluke. We really like it! That’s basically all the reason I need to add it to our regular rotation. But there are so many other good reasons! Continue reading “Balsamic Chicken in the Crockpot (or Instant Pot).”

Shortcut Burrito Bowls.

Shortcut burrito bowls are great for busy weeknights, since they can be on the table in minutes thanks to some easy time-savers!

I really wanted to name these “shorty-shorty-shortcut burrito bowls” or something that more eloquently celebrates how many corners you can cut and still have a really good, healthy dinner. We’re trying to plan ahead for quality family time since Jay’s schedule gets a little crazy this time of year, and we decided that Wednesdays we’ll do an easy, early dinner and the beach. This was the perfect meal to get us out the door in record time! (Okay, that’s a lie, it still took us 100 years to get out the door, but that wasn’t dinner’s fault. It was more the putting on of suits and changing of diapers and forgetting of sunglasses and searching for flip-flops and general disorganized corralling of excited kids. Maybe I need some sort of sheepdog to help with this process?) Continue reading “Shortcut Burrito Bowls.”

One-Pan Chicken Fajitas.

One skillet, less than 30 minutes, and no seasoning packet required, these chicken fajitas are a great, easy weeknight meal.

I hope your Cinco de Mayo involves a Mexican restaurant and enough chips + salsa + queso to make your jaw ache and your actual meal unnecessary. But if you’re cooking a Mexican feast at home – or you just need an easy weeknight meal – these chicken fajitas are for you, since you only need one skillet and less than 30 minutes to get it on the table! Quick & Easy Pan-Seared Chicken.

This quick and easy pan-seared chicken takes less than 15 minutes from fridge to plate. It's juicy, with a salty-seared exterior, and endlessly versatile!

I’m a meal planner, but I’ve tried and failed to be a meal prepper – taking a chunk of time on the weekend to chop veggies, cook a couple things, and set myself up for success during the week. (If you want to be inspired to do this, check out Shutterbean’s meal prep posts.) Mostly if I have a chunk of time on the weekend, I like to do something lazy and/or selfish. ;o) I’ve been loving having citrus kale salad components ready to go, though, and the idea of having some other healthy things available is super appealing. Chicken Caesar Wraps.

Chicken Caesar Wrap

**This Faster-than-Fast-Food post brought to you by my sister, Laurie!**

When I was in college, one of my favorite meals from our little food court (affectionately knows as the Furman P-Den) was chicken caesar wraps. I haven’t thought of them in years, but all of a sudden last night I was consumed with the need to eat one again. Continue reading “Chicken Caesar Wraps.”

Crockpot Chicken Tortilla Soup (with crunchy baked tortilla strips).

a loaded bowl of crockpot chicken tortilla soup with crunchy baked tortilla strips

I’ve been wanting to add some more crockpot recipes to my repertoire…and according to the survey, that would help a lot of you, too! (Thank you so much for your feedback! If you haven’t responded yet, it would be a huge help!) To be honest, I tend to feel a little uninspired in my crockpotting. I haven’t found many recipes that I want to make over and over, which is my main barometer for a successful recipe.  (A notable exception is this bbq beef, which is delicious and only has three ingredients!) First Taste: Summer Spaghetti.

I love going to the farmer’s market this time of year. I could go broke buying peaches. And corn. And peppers and watermelon and blackberries and big heirloom tomatoes for BLTs. I bought all of the above and a pint of golden cherry tomatoes for this Summer Spaghetti recipe I found on Pinterest. It also has lemony sauteed chicken and “garlic gravy” – which was the phrase I couldn’t stop thinking about once I’d read it! Continue reading “First Taste: Summer Spaghetti.”
