Shortcut Burrito Bowls.

Shortcut burrito bowls are great for busy weeknights, since they can be on the table in minutes thanks to some easy time-savers!

I really wanted to name these “shorty-shorty-shortcut burrito bowls” or something that more eloquently celebrates how many corners you can cut and still have a really good, healthy dinner. We’re trying to plan ahead for quality family time since Jay’s schedule gets a little crazy this time of year, and we decided that Wednesdays we’ll do an easy, early dinner and the beach. This was the perfect meal to get us out the door in record time! (Okay, that’s a lie, it still took us 100 years to get out the door, but that wasn’t dinner’s fault. It was more the putting on of suits and changing of diapers and forgetting of sunglasses and searching for flip-flops and general disorganized corralling of excited kids. I’m a meal planner, but I’ve tried and failed to be a meal prepper – taking a chunk of time on the weekend to chop veggies, cook a couple things, and set myself up for success during the week. I’ve been wanting to add some more crockpot recipes to my repertoire…and according to the survey, that would help a lot of you, too! (Thank you so much for your feedback! If you haven’t responded yet, it would be a huge help!) To be honest, I tend to feel a little uninspired in my crockpotting. I haven’t found many recipes that I want to make over and over, which is my main barometer for a successful recipe.  (A notable exception is this bbq beef, which is delicious and only has three ingredients!) First Taste: Summer Spaghetti.

I love going to the farmer’s market this time of year. I could go broke buying peaches. And corn. And peppers and watermelon and blackberries and big heirloom tomatoes for BLTs. I bought all of the above and a pint of golden cherry tomatoes for this Summer Spaghetti recipe I found on Pinterest. Back Pocket Chicken.

I decided to call this chicken “Back Pocket Chicken,” because it’s the perfect recipe to keep in your back pocket for all sorts of occasions.

It’s delicious enough to serve when company comes over, but it’s totally kid-friendly. Coated in bread crumbs and parmesan cheese, it’s kind of like a glorified chicken nugget–but oh-so-much tastier. It also couldn’t be easier to throw together, which is just what you need after a long, busy day or when guests will be arriving shortly and you still need to clean the bathroom.
