Salad is not exactly my love language, so you know when I say love a salad with this beautiful sweet onion dressing, it’s something to get excited about! Sweet with a little vinegary kick and a mellow onion taste, it’s perfect for drizzling on tender greens or crisp lettuce. It adds a ton of flavor without being heavy, and is a fresh, fun change of pace if you’re in a salad rut. I especially love it paired with savory toppings, like grilled chicken, toasted nuts, cheese, bacon (duh), or crispy fried onion strings (or…all of the above?)! Pesto Pasta with Burst Tomatoes.

Quick and full of summer flavor, pesto pasta with burst tomatoes is easy and delicious.

The irony of this post is that it has taken me a Whole Lot Longer to find time (and, you know, 2 hands) to type it than it did to actually make and consume. Pesto pasta is a great summer meal since it’s ready in the time it takes to cook the noodles, which is a plus in my book (even when I’m not holding/wearing/feeding a newborn)! Simple Basil Marinara Sauce.

This simple basil marinara has just a few ingredients, takes about 20 minutes to make, and is the perfect thing to stash in the freezer!

I’m successfully growing basil! (By this I mean I haven’t killed the lone basil plant I bought a few weeks ago. Because my mom waters it for me.) I needed to cut it back a bit, and it was the perfect excuse to make a batch of this simple basil marinara sauce. It’s just a few ingredients, it only takes about 20 minutes, and it’s the perfect thing to stash in the freezer if you don’t need it right away. Before our move, some dear friends had us over for dinner and served us this delicious quiche (and a kale salad with mandarin oranges that I want.to.eat.right.now). Obviously I begged for the recipe, and I’ve made it twice! It checks a lot of food love boxes for me: perfect any time of day, makes great leftovers, the recipe is flexible if you want to change up the ingredients, and it involves piles of cheese and pie crust. Pita Pizzas (a Faster than Fast Food Meal).

We have officially completed Phase 1 of our move! Everything we own* is out of our house and in storage, and we’ve moved in with friends in Raleigh. Eventually we’ll be house/dog-sitting for them, but for now we’re just taking up a lot of their space. Phase 2 is a teeeeny rental place in Wilmington that I’m optimistically referring to as our “vacation house”, where we’ll be until we can move into our actual new house (c’mon, Phase 3!).

*except for the piles.upon.piles of things that 2 adults, 1 kid, 1 baby and 1 dog need for a couple of weeks of nomadic living
