The Perfect Bowl of Oatmeal {GIVEAWAY!}

When I was in high school, I got the chance to visit Australia. Our group stayed at a camp for part of the time, with a hearty camp breakfast in the morning (Vegemite on toast, anyone?). They made the most wonderful, creamy oatmeal, and I ate multiple bowls of it every day. The texture was just so perfect – definitely a far cry from the instant oatmeal packets I made for myself at home! I assumed that the secret was, you know, actually cooking the rolled oats on the stove, but when I tried it, mine always turned out more…gluey than creamy. Chocolate Chip Granola Bars.

I love to bake, but lack the self-control to have homemade sweets around on a regular basis. (Oh, I’m in the kitchen, it must be time for a snack to hack off another piece of this cake/snitch another cookie/try not to let the kids see that I’m chewing something….)  That’s why I’m so into zucchini snack cake and breakfast cookies, since they’re healthier (lower in sugar and more filling, at least!) but still fun to bake. When I mentioned my granola-bar-making woes, one of my readers pointed me to these chocolate chip granola bars from Weelicious (thank you, Lindsay, from the bottom of my heart!), and I’ve been making them ever since! Breakfast Cookies.

I’ve been on a quest to make the perfect homemade granola bar for years. I’ve tried lots of recipes and I’ve also tried to create my own recipe from scratch. Baked, unbaked, crunchy, chewy…they’ve certainly all been edible, and some have been good enough to make a second time, but I haven’t found The One. I want a granola bar that doesn’t rely on a lot of added sugar to taste good, that can handle some variation of ingredients, and stays together, for the love. It’s a bummer to cut into your pan of granola “bars” and watch them turn into crumbs before your eyes (or fall to pieces after knocking around in a lunch bag). Continue reading “Breakfast Cookies.”
