A couple of weeks ago, I dabbled in the Whole30. (If you’re not familiar with it, it’s a grain-free, sugar-free, dairy-free way of eating, and the goal is to help you to understand how different foods make you feel.) I have a ton of respect for people who commit and do it – I’m probably never going there, but I dipped my toes in and at the very least, I’m still doing a weird thing wherein I eat a big salad for breakfast a few times a week, and taco bowls with roasted sweet potatoes were born! If you’ve been a reader for long, you know that one of my main goals for summer dinners (besides binging on corn on the cob) is moving as much of the cooking outside to the grill as we can! I love any meat on the grill, and these grilled potatoes go with anything. They couldn’t be easier – and they’re crispy on the outside, fluffy on the inside, and topped with melty cheese. SO GOOD. The summer after I graduated from college, I lived at home and taught at my church’s day camp in the mornings and worked at a gym doing personal training in the evenings (have I even told you that was my pre-kid job?!). I had a really interesting variety of clients (words that do not begin to describe) and was getting my first dose of people telling their trainer All The Things. On the nights I worked I finished at 8 and I have the most vivid memory of driving home starving to find this meal waiting for me. Pot roast made by your mom – is there anything better?? Ham, Potato, & Corn Chowder.

This is the soup that I promised to tell you about in my March meal plan. Whoopsies. It’s SO PERFECT for using your leftover Easter ham, though, right? ;o)

I may or may not still have leftover ham from Thanksgiving in my freezer. I realized a few weeks ago that I needed to be a little more proactive in using it up, so I pinned some ideas and came up with this recipe from two similar ones from Damn Delicious and Cooking Classy. We’ve had this ham, potato, and corn chowder twice now, and my three-year-old didn’t even pick anything out! A-mazing. Even my littlest girl had some of the potatoes on her tray. It’s rich-tasting and creamy (but not heavy), with hints of smokiness from the bacon and sweetness and texture from the corn – yum. Continue reading “Ham, Potato, & Corn Chowder.”

Tender Roasted Potatoes and Butternut Squash (with melty cheddar).

A lonely butternut squash had been sitting on the counter for a few days, and I was planning to roast some vegetables to go with pork tenderloin for dinner. I was going to chop a few things up, toss them with olive oil and salt and pepper and throw them in the oven, but as I was cutting up the squash I started thinking about a potato dish that I hadn’t made in a few years. I decided to try it with the butternut squash mixed in to health-ify things, figuring the caramelized onion and cheese would help the squash along. But instead – the squash made the whole thing ten times better – the sweet and salty combination was so, so good. I don’t think I can go back to the potatoes-only version!
