The summer after I graduated from college, I lived at home and taught at my church’s day camp in the mornings and worked at a gym doing personal training in the evenings (have I even told you that was my pre-kid job?!). I had a really interesting variety of clients (words that do not begin to describe) and was getting my first dose of people telling their trainer All The Things. Ham, Potato, & Corn Chowder.

This is the soup that I promised to tell you about in my March meal plan. Whoopsies. It’s SO PERFECT for using your leftover Easter ham, though, right? ;o)

I may or may not still have leftover ham from Thanksgiving in my freezer. I realized a few weeks ago that I needed to be a little more proactive in using it up, so I pinned some ideas and came up with this recipe from two similar ones from Damn Delicious and Cooking Classy. We’ve had this ham, potato, and corn chowder twice now, and my three-year-old didn’t even pick anything out! A-mazing. Even my littlest girl had some of the potatoes on her tray. Tender Roasted Potatoes and Butternut Squash (with melty cheddar).

A lonely butternut squash had been sitting on the counter for a few days, and I was planning to roast some vegetables to go with pork tenderloin for dinner. I was going to chop a few things up, toss them with olive oil and salt and pepper and throw them in the oven, but as I was cutting up the squash I started thinking about a potato dish that I hadn’t made in a few years. I decided to try it with the butternut squash mixed in to health-ify things, figuring the caramelized onion and cheese would help the squash along. But instead – the squash made the whole thing ten times better – the sweet and salty combination was so, so good. I don’t think I can go back to the potatoes-only version! Roasted Pork Tenderloin (and Better Steamed Broccoli).

I hate to brag, but I married the Grill Master. (I’m sorry, but I snagged him and you didn’t. Fortunately, there’s hope for you. Read on.) There have always been a few things that I don’t even bother to cook inside since I love the grilled version so much more – and pork tenderloin was one of those.  But one day, we were taking dinner to friends who had just had a baby (we know lotsandlotsandlots of new babies!), and I was planning to send these sweet potatoes and pork tenderloin.
