I realize it’s only my first month of having a kindergartner, so I’m probably not allowed to whine about packing lunches yet, but let’s just say it’s a Hard Job. Why don’t we have any bread? Why do we have bread but she doesn’t want a sandwich? Why, one of those times when we didn’t have any bread, did I make noodles with parmesan cheese (literally: just noodles and parmesan cheese) and unwittingly set the standard against which all future lunches would be measured and found wanting? These chocolate peanut butter flax granola bars bring me great joy. They taste a lot like a candy bar, but they’re full of healthy stuff (oats! flax! nuts!) and aren’t nearly as indulgent as that blanket of chocolate makes them look. They’re chewy, peanut buttery, sweet and salty, and I keep running out of the ingredients because I can’t.stop.making.them. Continue reading “Chewy Chocolate Peanut Butter Flax Granola Bars.”
Confession: shortly after I posted this whole wheat banana bread recipe, I tried another, similar recipe from Cookie & Kate – and I liked it a teeny bit better. These bran muffins are one of my favorite breakfasts – slash morning snack, slash muffins all day, e’ryday. They’re very tender, but they also have good chewy texture, and they’re pleasantly whole-grainy without being dense/boring/dry. The muffins themselves are lightly sweet, and the raisins add an extra little burst (oh, they’re optional, haters). The fiber makes them hearty and filling, and they freeze well! Plus, there’s a secret ingredient!! Continue reading “Bran Muffins.”
I haven’t completely tested this theory, but I’m pretty sure I’m always in the mood for pancakes. Jay and I are big Parks and Rec fans, and this line from the first episode is one of my favorite Andy moments and one we quote to each other at least once a week:
“Hey baby, if you go into the kitchen could you make me some pancakes real quick?”
Also: I just spent way too much of my life trying to figure out how to get a clip of that onto the blog. Jay to the rescue. And now you can follow betondinner on Instagram! Maybe I’ll be better about updating it than my poor neglected Twitter account? Continue reading “Whole Wheat Pancakes.”
