First Taste: Summer Spaghetti.

I love going to the farmer’s market this time of year. I could go broke buying peaches. And corn. And peppers and watermelon and blackberries and big heirloom tomatoes for BLTs. I bought all of the above and a pint of golden cherry tomatoes for this Summer Spaghetti recipe I found on Pinterest. It also has lemony sauteed chicken and “garlic gravy” – which was the phrase I couldn’t stop thinking about once I’d read it!

I mixed up the quick lemon-herb marinade for the chicken (right in a big ziplock bag) in the morning, and Jay cooked everything while the kids and I were at the pool with some friends! He used a big skillet to sear the chicken in a couple batches and then make the sauce. Since we both like tomatoes better cooked, he sliced the tomatoes and tossed them in between the garlic-cooking step and the thickening-with-flour step.

There was really too much sauce the first night (and that’s saying something, since I like a LOT of sauce) – and we realized later we had used about half the pasta it called for. Oops! I liked the amount of chicken and tomatoes, though, so I think I would either increase those ingredients or decrease the sauce next time.

My only regret is not having fresh herbs (or at least fresh basil). I really loved that garlic gravy and can see making lots of versions of this in the future! It would be good with shrimp, or mini meatballs, or zucchini instead of tomatoes, or zucchini noodles!, or fresh mozzarella….

    This looks and sounds amazing…AND I really want a BLT now with fresh ripe tomatoes!

    We tried this tonight, and Elijah even liked it! Any meal that a toddler enjoys is a major win in my eyes. Thanks for passing along the yummy recipe! We will definitely be adding this to our recipe rotation.

      Yay, Mere! I guess I failed to mention that one kid had plain (as in, totally plain) noodles and the other ate it up. I think she would have liked it if she hadn’t already made up her mind to hate it! 😉
